Recipe 101: Eggplant Croquette

Eggplant croquet or Poqui-poqui

From Chef Boy Logro's recipe as shown in Idol sa Kusina, QTV.

Ingredients:

4pcs medium-size eggplant
1pc medium onion, diced
4cloves garlic, minced
2pcs medium tomatoes, diced
2pcs egg, beaten
1cup flour
1cup breadcrumbs
salt and pepper to taste
oil for frying

Procedure:
Grill eggplants until skin are charred. Let it cool then peel off the skin; chop the flesh. Set aside.

In a pan, heat oil, saute garlic, onion and tomatoes.


Add chopped eggplant and season with salt and pepper. Stir and cook for 5 minutes.

Add beaten eggs and continue stirring for two minutes. Remove from heat, cool for a bit.

Add flour then form into balls and then roll them in seasoned breadcrumbs (breadcrumbs with salt and pepper).

Dredge then fry. 

Transfer to serving plate and serve. (Sorry, there were parts that seemed sunog but they were actually tustado hehe)
