Most of the time my pantry yields more carrots than needed. Apart from adding them to just about any dish, to make it beta-carotene loaded, I found out other interesting ways to serve them. Hubby usually just munch carrots straightaway, which is perfect also, but for the more adventurous palate, you might want to give this recipe a try. This dish is to be baked but I just used our trusty toaster oven instead. For the original recipe, click on the link below.
Ingredients:
2 large carrots, peeled and sliced into matchsticks
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 tablespoon olive oil
Salt and freshly ground black pepper
Procedure:
In a medium bowl, add the carrots, olive oil, cumin, cinnamon, and salt and pepper to taste.
Toss to coat the carrots.
Transfer to a tray lined with cling wrap.
Place inside oven toaster and set to 3-6 minutes or until lightly browned.
Serve.
