Fried Tilapia with Salsa Fresca

to make this dish the simplest, you just fry the fish and prepare onion-tomatoes mixture as side dish. but if you want a version that has more ingredients to make it more interesting this dish is a good try. i got this recipe in yahoo.ph and have just tried last Sunday. just go easy on cilantro so as not to empower the salsa (which i mistakenly did) otherwise use as many as you please. the flour mixture is perfect although i wish i'd have added a little more paprika in it. remember, golden fry the fish as anything sunog is cancerous. bon appetit!

ingredients:

2pcs tilapia
1/4cup flour
1tsp cumin
1tsp paprika
4-5pcs tomatoes, chopped
1small white onion, chopped
2sprigs cilantro, chopped
salt
pepper

procedure:

on a flat plate mix flour, cumin and paprika. set aside.

in a bowl mix chopped tomatoes, onion and cilantro. season with salt and pepper, mix and set aside.

pat tilapia to dry. season with salt and pepper. dredge in flour mixture until fully coated. tap off excess flour.

fry tilapia 8-10 minutes or until golden brown.

serve with salsa fresca
